Chico Aguiar
This recent label is a unique expression, made with Agave "Chico Aguiar," a subspecies of A. angustifolia, endemic to Jalisco. It grows in temperate climates at a lower altitude than Agave Maximiliana.
Produced in a small town within a valley surrounded by the Sierra de Mascota, where there is a microclimate that is slightly warmer with a subtropical feel—ideal conditions for this agave to thrive.
It is rare to find an expression made with 100% Chico Aguiar, which makes it a very special distillate.

Process: Batch - Artisanal (handcrafted)
Growth of the Agave: 8 to 10 years.
Grinding: It is trimmed with coa, ax and machete, once the pines are loaded in wicker baskets and are taken to the oven.
Cooking / oven: The agave "piñas" are split and are cooked for 3 days in adobe oven, heated with firewood, obtained in a controlled way, from endemic species of oak from the Sierra of Jalisco.
Water: Collected from a natural spring located in the mountain.
Fermentation: Natural, from 3 to 5 days.
Distillation: Distilled naturally 2 times in an arabic still.
Bottle: Recycled glass.

Before tasting Perra Suerte, make yourself comfortable and relax. Experiment with your senses the bottle. Serve in mezcalero glasses, bring the raicilla close to your nose and try to identify the aromas.
Then, with your finger, place raicilla on your skin and smell the aromas again. Now gather saliva in your mouth and take a small sip of raicilla and mix in your mouth. Take another drink now without saliva.
